Salmon with Lemon Pasta, Peas and Broccolini

I love salmon. I’m always trying to think of new ways to make it though.

The other night I had a taste for pasta but I had taken some salmon out of the freezer so I had to use it. While salmon and pasta may be the main ingredients for this dish I created, the real star of it is the sauce though!

I started by cooking the pasta and searing the salmon, like I normally do. In a wok, I started the sauce. I know cream sauces aren’t the best sauces to make when you’re a Weight Watcher, but I had a taste for it! I used only 1/2 pint and then added some of the pasta water to it to increase the volume.

I topped it with some some broccolini, baby corn and peas. The sauce was garlicky, lemony, peppery, and the veggies make it crunchy. It was quite tasty!

This dish could easily be made with chicken, shrimp, or even just vegetarian. The sauce is the show stopper. I surprised myself how good it was! And since I was eating that evening at home by myself, I had no shame in putting the plate up to my mouth when I was done and drinking the rest of the sauce!
